All our cheeses are made with raw cows milk and vegetarian rennet. They are made in small batches by our dedicated team of cheesemakers and matured with care and attention in our maturing rooms. We buy and collect milk from a local dairy herd and the farmer is proud of the cheese made with his milk . It is the cows that produce the raw material and the seasons which get reflected in the flavours - which is all rather beautiful.
Sometimes we don't make quite the right amount of each variety leading to them being unavailable for short periods.
