All Monkland Cheesemakers cheeses are made with raw cows milk and vegetarian rennet. They are made in small batches by Dean's dedicated team of cheesemakers and matured with care and attention in the maturing rooms. The Cheesemakers buy and collect milk from a couple of local dairy herds and the farmers are proud of the cheese made with their milk . It is the cows that produce the raw material and the seasons which get reflected in the flavours - which is all rather beautiful.
Sometimes we don't make quite the right amount of each variety leading to them being unavailable for short periods.
